Low-Calorie Sour Apple Soda

This is one of the few “fresh” soda recipes in this book, meaning you don’t cook the ingredients before turning them into a base. For this reason, make sure you keep this base well chilled, and adhere to its freshness date strictly. The added lemon juice and citric acid work as natural preservatives, so this base will still last for two weeks in your refrigerator. If the soda is not sweet enough for you, add up to 1 additional tablespoon of stevia to the base.

MAKES 2 CUPS SYRUP, ENOUGH TO FLAVOR 1 QUART OR 1 LITER CARBONATED WATER

1 quart plus 1⁄2 cup chilled water, divided

4 medium tart apples, such as Granny Smith or McIntosh

2 tablespoons lemon juice

1–2 tablespoons stevia

1⁄2 teaspoon citric acid

Carbonate 1 quart water with your soda maker, following the manufacturer’s directions. Chill on ice or in the refrigerator until cold, about 20 minutes on ice or 1 hour in the fridge.

Wash apples, remove stems, and cut in half. Using a melon baller, remove seed packs from apples, discarding seeds. Roughly chop apples and place into the bowl of a blender or food processor. Add remaining water and lemon juice, and purée on high until completely smooth, about 3 minutes.

Strain mixture through a wire-mesh strainer, pressing on solids with the back of a spoon to extract as much of the liquid as possible. Stir in 1 tablespoon stevia and citric acid. Transfer syrup to a storage container and chill until completely cold, about 4 hours.

To make soda, place 1⁄2 cup syrup into a glass. Top with 1 cup sparkling water and stir gently. Add ice, if desired, and serve.
